Campbell, Tunis G. Hotel Keepers, Head Waiters, and Housekeepers Guide.

1848

Written by a free African American man, it is considered the first American guide to hotel and dining room management. Its recipes provide an unparalleled documentation of antebellum hotel cooking. Campbell became active in abolitionism and, during Reconstruction, he served as a Georgia justice of the peace and state senator, before being driven out of the state and, ultimately, back to Boston, where he died in 1891.
